I told Nannette I was going to post this one, so here it is, Nannette and everybody!
This is a quite healthful salad which is only dressed with olive oil and lemon juice, or apple cider vinegar, so there's no questionable mayonnaise or other manufactured dressing!
It's also quite flexible.
I believe, too often salad items are treated as little more than a garnish, when such health-packed dishes should be served generously!
INGREDIENTS.
About 1/3 of an average lettuce, preferably cos type,
either torn up or sliced finely;
2-3 tomatoes, diced;
1 red capsicum, diced;
1-2 Lebanese cucumbers, sliced;
2-3 carrots, peeled and grated;
1-2 stalks celery, diced;
2-3 spring onions, sliced;
1/2 cup or so of another green, e. g. pea shoots, bean sprouts, dandelion or rocket leaves torn up, etc.
1 can kernel style sweet corn, and keep the liquid separately.
1 tbsp. olive oil (extra virgin, virgin or pure);
Juice of 1 lemon, or 1 tbsp. apple cider vinegar;
1/2 tsp. salt.
1 tbsp. liquid in the can of sweet corn (this adds natural sugar, which improves palatability, esp. for kids).
METHOD.
Place all ingreds. in a salad bowl -lettuce or celery best first, it's easier to mix well- and toss well!
Serve with low fat cottage cheese or silken tofu, and wholemeal bread.
SERVES 4-6 (1 serve is about 2 cupfuls).

Note. Re the different grades of olive oil, I believe for cooking or table purposes, the grades I mention are suitable. Other grades, e. g. fine, are obtained by solvent extraction, and are less suitable.
